<p>Before you start cleaning the cobia, make sure your knife is as sharp as possible. This is a large fish. That means it also has big bones. The flesh will be a pinkish-tan color and fairly thick and firm, which will help you cut steaks. It does mean the knife you use on smaller fish won’t cut it here. Use a large and very sharp knife to do this fish justice. If your catch is particularly large, you may want to keep a honing steel nearby so you can touch up the knife as you go.&nbsp;</p>



<ul class="wp-block-list"><li>When you’re ready, cut up the belly of the cobia. Start at the base and work your way up to the fish’s collar. Once it’s open, you will need to remove the guts. This may require the use of your knife or some kitchen shears to get the innards loose enough for removal.&nbsp;</li><li>Once removed, you’ll want to clean up your work area.&nbsp;</li><li>Now you can remove the head. Do this by cutting through the collar of the fish and then cutting it off.&nbsp;</li><li>With the body of the fish clean and ready, you can cut cobia fillets.&nbsp;</li><li>At the top of the backbone, begin a long cut to the tail. You may want to sharpen your knife again before you start this step. You’ll be cutting through some bones as you travel down along the spine. Cut the fillet away. You may need to use your knife or some clean pliers to neatly remove the rib bones from the fillet.&nbsp;</li></ul>



<p>During this process, if you wish to skin the fillets, you’ll want to do so one at a time. Skim the fish about an eighth of an inch from the edge. Some people prefer to leave the skin on, particularly if they’ll be grilling the fish, since the scales can crisp up nicely.&nbsp;</p>

These fish are scavengers, so their varied diet in the sea can affect their enjoyment as a meal. A lot of what creates the unique cobia taste is how this fish retains fat in the muscles when it’s cooked, making it moister.&nbsp;</p>

<p>Long-line or hook and line trolling are both common tactics. You’ll need to use a heavy duty line, since these fish can be quite large and powerful. You’ll want at least a 30 pound test line.&nbsp;</p>

<p>Even though perch is a common fish, there&#8217;s often confusion as to what exactly it is and how it fares on the table.</p>



<p>Since there are a number of species of gamefish that fall under the blanket term &#8220;perch&#8221;, many people don&#8217;t know exactly what to expect with when they see it on the menu. There are some slight differences from, species-to-species, but they&#8217;re very similar from a culinary standpoint.</p>





<h2 class="wp-block-heading">Taste</h2>



<p>The perch boasts white flesh that has an excellent flavor with a sweet taste and firm crumbly texture. It has a flavor that is mostly likened to that of the walleye but with more appeal.</p>

<p>There are three types of Perch available in American waters, including the Silver Perch, White and Yellow Perch. In terms of taste and flavor, only slight differences exist, but they are generally the same.</p>



<p>Yellow Perch is the most common species of freshwater fish found in North America mostly in lakes and the south of Canada. It is regarded as the best panfish around the world. It’s widely reared in ponds to meet its ever-increasing demand thanks to its excellent moist, mildly sweet flavor. There are considerable differences in fat and protein content between the pond and wild Perch, although the taste is the same. However, some people will tell you that Yellow Perch is the most delicious of the three perch species.</p>



<p>The white Perch is characterized by a silvery body marked with dark lines that run longitudinally. A mature white perch can be as long as 19 inches, weighing about 1 pound. This type of Perch is mostly found in the waters between Scotia and South Carolina, although large shoals can be found in the Hudson River going to the Chesapeake Bay.</p>



<p>Silver perch is another notable species in the American diet, although they are the smallest. The little critters are also called sand perch and are related to the redfish. The Perch mostly hangs around in creeks and sea grasses on the eastern coast. Although they are relatively small in size, they are a great dish and are easy to catch.</p>

<p>Perch care freshwater fish, therefore, will always be found in such waters. However, they tend to inhabit weedy areas, underwater wrecks, inlets, around bridges, and among reeds. This type of fish forms schools that swim together, with shoals of the larger ones preferring deeper waters while the smaller ones are mostly inhabiting shallow waters.</p>

<p>Some of the most popular perch habitats in the US include the Chesapeake Bay in Maryland, the shoal lake in Manitoba, the Devils lake of North Dakota, the Mississippi River, particularly the Wisconsin region, Lake Gogebic in Michigan, and Lake Waubay in South Dakota.</p>



<h2 class="wp-block-heading">How to Catch Perch</h2>



<p>Catching perch is one of the easiest things you can embark on if you know where to find them. The first thing is to get the fishing gear ready, including a fishing rod of about 6-8 pounds. The fact that Perch are small means no heavy equipment is needed. Taking a cooler or a stringer with you will be an added advantage if you plan to catch several of them.</p>



<p>The best baits for catching perch include minnows and larvae, although pieces of crayfish would still do. Alternatively, you can use lures, including jigs, plugs, and spinners, to attract this fish. After gathering all the above, it’s time to go hunting for one of the most delicious fish meat.</p>



<p>You need to know the best time to catch Perch, which is the feeding time. The morning and evening is the best time as we come close to the end of spring and the beginning of summer, while late afternoon towards evening is the best time as near the end of summer.</p>



<p>Perch prefer deep waters in areas that offer shade against sunlight. You can throw your bait and wait patiently for a Perch to swallow the bait. You should feel a slight tap and the line moving once it has adequately hooked and is trying to run away. Slowly pull the fish out of the water and place it in the cooler.</p>



<h2 class="wp-block-heading">How to Clean a Perch</h2>



<p>Have you ever cleaned a perch? If not, here are a few simple steps you can follow to get the fish ready for cooking successfully. All you need is a cutting board and a filleting knife at your disposal.</p>



<p>Holding the fish against the cutting board with one arm, make an incision from the top of the gill plate running down and another running along the fish&#8217;s length to the pectoral fin, ensuring you don&#8217;t cut the bones.</p>



<p>Where you made the first cut, insert the knife half an inch down and cut backward the rear, your knife scraping against the ribcage as you cut. The dorsal fin should guide you as you cut along. Once you come to the end of the ribcage, push the knife cutting through. The backbone should guide the blade to the end of the tail.</p>



<p>Having done that, you should be able to lift the fillet from the backbone and, using the curved tip of the knife, cut the fillet along the outer rib surface towards the belly. This gives you a boneless fillet.</p>



<p>Turn over the fish and carry out the same steps as above for the other side.</p>



<p>If you want to remove the skin, place the fillet skin in contact with the cutting board. Hold one end of the fillet and slowly pierce a small portion exactly between the skin and the flesh. It would be best if you had a very sharp knife for skinning. Slant the blade so that it runs horizontally as you carefully separate the fillet from the skin. The fillets are now ready for cooking.</p>

<p>The other cut should be made above the lateral line going back along the line then down to the anus. Turn the fish to have its back facing you and start cutting close to the backbone starting from where you made the vertical cut. The knife should cut through to the spine and down to the ribcage. However, leave the cut flesh attached at the tail.</p>



<p>The next thing is to cut any flesh still attached to the skeleton of the fish. After detaching the fillet, cut it free from the tail.</p>



<p>Carry out the same process on the other side of the fish, this time cutting off the tail end. By starting from the tail end on the other side of the fish, cut all attachment points between the fillet and the skeleton. Place the fillets on the cleaning bench skin in contact with the surface. Hold the fillet from the tail end and cut the flesh off the skin leaving the red coloring attached to the skin.</p>



<p>The pin bone is removed by cutting a small portion of flesh along the lateral line. The same is done for the other fillets.</p>

The convict fish is so named because of the dark bands that run vertically to its body, and the fact that it’s famous for stealing baits. It can be found in the waters on the East Coast of the US, especially in North Carolina and Florida, the Gulf of Mexico and the Atlantic.</p>



<p>The best place to look for sheepshead is around surfaces such as jetties, piers, pilings, old bridge pillars, and rocks as they love scraping food particles from these surfaces. Mostly, they will be found ten or more feet below.</p>



<p>From December to April, sheepshead loves to conglomerate ready for spawning, and the highest numbers can be expected between March and April. However, these species of fish can be found throughout the year in the gulf coast.</p>



<p>Sheepshead migrates annually for spawning moving from estuaries to offshore territories. Generally, this fish species can be found in areas where small invertebrates thrive, offering them an excellent source of food. They love hanging out around mangrove roots, oyster reefs, and physical structures, including piers, docks, pilings, and seawalls. At other times, they can be found in sea grasses and sand flats on shallow waters.</p>



<h2 class="wp-block-heading" id="How-to-Catch-Sheepshead">How to Catch Sheepshead</h2>



<p>Catching the sheepshead can be tricky for anglers, mostly if you are not used to these fighters. Their mouth&#8217;s morphological characteristics make it hard for them to be lured by most of the baits used to catch other species. The mouth is small with humanlike teeth adapted for crushing the shells of certain crustaceans such as oysters, crabs, and barnacles.</p>

Unlike other aggressive species while capturing the prey, the sheepshead is gentle and can snatch the bait and disappear unnoticed. You must ensure the bait is appropriately hooked; otherwise, it will be crushed, sucked, and the hook spit long before you realize. This is genuinely a convict when it comes to bait stealing, although it also requires patience to ensure it is appropriately hooked. Ensure the hook is sharp enough to penetrate the hard and body surface of the sheepshead&#8217;s mouth.</p>

A Wahoo may look like a large mackerel at first glance, but they do have very noticeable differences to those familiar with the species.</p>



<p>Wahoo are a part of the same same family (scombridae) as mackerel and tuna. You&#8217;ll find them most often in the subtropical regions like the Caribbean and Hawaii and are in demand as a local delicacy.  Sportsman also hold them in high regard due to their incredible speed.</p>



<p>Wahoo are bluish green on the top half of their bodies, fading into silver on the sides and bottom.  The wahoo body is long and covered in tiny scales . They can weigh up to 180 pounds and tend to feed on squid or smaller fish.</p>



<p>Although wahoo populations can be affected by commercialized fishing, their high reproductive growth allows them to flourish without the threat of being overfished. The population status throughout the Pacific and Caribbean is thought to be high and scientists believe this species is of limited conservation concern.</p>



<p>Wahoo have a shorter life span than most fish, around six or seven years and are usually solitary or travel in small groups of two to three fish. </p>

<p>As mentioned already, wahoo are found in subtropical waters throughout the world but during the summer months they can also travel to more northerly regions as the waters warm.</p>



<p>Reliably locating wahoo can be a tall order for a novice, but seasoned captains will usually have a better feel for finding them in their waters. Your best bet is typically anywhere between 90-350 feet, especially if ocean ledges, bottom foundations or wrecks are present.</p>



<p>Because they are solitary or only found in small groups, they are a very expensive fish to catch and in turn, buy. While buying wahoo fresh from a local grocery store may be difficult unless living in subtropical coastal regions like the Gulf of Mexico or the Bahamas, there are plenty of websites that package the fish and ship out worldwide.</p>



<p>Like it is with any other fresh fish, you&#8217;ll almost always find the best food quality in a coastal area, so be on the look out if you live or visit places with natural fisheries. Wahoo is definitely not the easiest fresh fish to come by, so take advantage if you see it on the menu.</p>

<p>Wahoo has a firm texture and the meat is a nice white color that will stay that way after being cooked. It has a mild, sweet taste and if cooked properly will be flaky and delicate.</p>



<p>The meat is low in saturated fat and contains many vitamins and minerals essential to a healthy diet. Although wahoo are always in the water year round, the peak season and the time they&#8217;d be tastiest, is from May to September.</p>



<p>Wahoo tends to have a moderate-to-high mercury level, which can be toxic in very high doses. Many people are put off when by that fact, but it&#8217;s really not an issue aside from extreme cases.</p>

<p>The recommendation is that men and women can safely consume 2 servings of wahoo per month while children should have one serving. This recommendation is based on EPA guidance.</p>

<p>Wahoo is a great eating fish that can be cooked in a variety of ways. Because it has a meaty texture to it, it&#8217;s the perfect fish to grill but also tastes great baked or broiled. However it&#8217;s cooked, the most important thing to remember is to never overcook, it may be easy to do since it&#8217;s a lean meat. The best bet is to take the fish out of the oven or grill and let them finish off cooking while covered. </p>



<h3 class="wp-block-heading">Here&#8217;s a simple wahoo recipe to enjoy on the grill:</h3>



<p><strong>Ingredients:</strong></p>



<ul class="wp-block-list"><li>3 tbsp butter</li><li>1/2 onion diced</li><li>2 dill sprigs</li><li>1 tsp salt</li><li>1/2 tsp black pepper</li><li>lemon juice to taste</li><li>2 wahoo steaks</li></ul>

<p>Melt the butter in a medium pan and cook the onions until translucent. Add the dill and turn off the heat. Season the wahoo steaks with salt and pepper and either add them into the pan with the marinade and spoon some on top or put the steaks and marinade into a resealable bag and let sit for twenty minutes. In the meantime, grease the grill and preheat on medium low. When it&#8217;s time to grill, turn the temperature back down to low, sear each side for about 2-3 minutes and enjoy! </p>

<p>Triggerfish are beautiful, brightly colored fish with interesting patterns and dramatic body markings. They often have larger fins and ornate tails. Part of the Balistidae family, there are 40 different species of triggerfish occupying both tropic and subtropic oceans all over the word.</p>

<h2 class="wp-block-heading">Where to Find Triggerfish</h2>



<p>Triggerfish have a few usual hangouts like the Mexican Gulf nearshore and offshore waters, the warmer waters of the Caribbean reefs, and, the larger part of the East Coast.</p>



<p>All of these places are excellent for finding triggerfish, but one of the best places to catch triggerfish is in the waters of Florida. Florida waters are routinely productive for triggerfish.</p>

<h2 class="wp-block-heading">Is It Safe to Eat Triggerfish?</h2>



<p>Triggerfish, like many other reef fish, are susceptible to ciguatera. Ciguatera is a foodborne illness that causes an array of negative effects ranging from nausea to cardiac and neurological issues.</p>



<p>However, this doesn&#8217;t mean that all triggerfish can&#8217;t be eaten. The risk of ciguatera can be mostly eliminated by avoiding the consumption of larger fish. The rule of thumb is that you shouldn&#8217;t keep and eat any triggerfish that are over 5lbs.</p>

<h2 class="wp-block-heading">About the Salmon Grouper</h2>



<p>Sebastes Paucispinis is the scientific name for the salmon srouper. Bocaccio, Grouper, Tom Cod, and Slimy Grouper are other comonly-used names.</p>



<p>Salmon Grouper are part of a category of fish known as &#8220;Rockfish.&#8221; Unlike regular grouper species <a href="https://uplandcoast.com/grouper-taste/">(here&#8217;s a link to an article we wrote about eating grouper in general)</a>, the bocaccio is much debated as a dinner choice.</p>



<p>Found in the Pacific Northwest, salmon grouper is one of the bigger Rockfish as they can grow up to three feet long and can live to be 45 years old.</p>



<p>Salmon Grouper is listed as an endangered species. Conservation efforts have been in place for years to help keep this Rockfish plentiful. </p>



<h2 class="wp-block-heading">How to Catch Salmon Grouper</h2>



<p>Catching any Rockfish is pretty much the same technique. Once you find where the salmon grouper is located, it&#8217;s not that hard to put some fish in the boat.</p>



<p>You can catch salmon grouper using bait or lures, bait being the superior choice. Either conventional or spinning tackle will work fine.</p>



<p>Plastic lures like scampi tails, metal jigs, hooks dressed with material like bucktail, octopus type lures, or even pieces of squid are appealing to the salmon grouper. Live bait works the best, like anchovies or sardines.</p>



<p>Salmon grouper are not picky eaters; they will generally go for many different types of bait. </p>

<p>Black grouper is the second most common species of grouper in the American seafood market. It is very similar to red grouper, but it does tend to be a bit firmer. Truthfully, all but the most experienced seafood pros can tell the difference between red grouper and black grouper once the skin has been removed.&nbsp;Black grouper&nbsp;market size is right around 20lbs.</p>



<p>Gag grouper is a separate species from black grouper, but it shares its traits to a degree that makes any differences negligible at best. You&#8217;ll commonly see gag lumped in with black in the seafood market due to its very similar flavor and texture.</p>



<p>There are many other species of grouper, but they are not nearly as common in the market as those listed here. The vast majority of what you&#8217;ll find in restaurants or stores will be a variety of red, black, and gag grouper.</p>

<h3 class="wp-block-heading"><strong>How to Clean a Grouper</strong></h3>



<p>All grouper are fairly substantial fish with quite a bit of meat on their bones. This makes for a high yield of accessible, edible meat. Black grouper&nbsp;have an especially high meat yield in relation to their weight. This is due to how small their heads are when compared to the heads of red grouper.</p>



<p>Filleting a grouper is very straightforward, but there are a few extra steps to get the most out of your fish. Anyone who has some basic experience with cleaning a fish shouldn&#8217;t have any problems here.</p>



<p>To clean a grouper, all you really need is a sharp knife. A pair of pliers is helpful, but not required.</p>



<p>Start by making your first cut right where the filet begins, just as you would with any other large fish. Turn your knife and follow the bones as closely as possible, keeping your knife tilted slightly downward as you go.</p>



<p>Once you have your filet, move on to the rib meat. Grouper ribs are large, making this process fairly simple. Simply use your knife or boning shears to get in between the hard to reach areas.</p>
